A Little Taste of Summer ~ Acai Bowls

After coming home from Maui last month I became obsessed with Acai Bowls. They’re deliciously refreshing and can be found anywhere on the island. Figured why not bring a little touch of summer into my life every day and make them at home. Not even kidding, I’ve had one almost every day since. We’re doing no-sugar January and it’s been the perfect replacement for my ice-cream addiction. Love eating healthy 90% of the time, but ice-cream has been my weakness for as long as I can remember. For those of you who know me, you’ll be shocked to know it’s been 10 days! The only reason I’ve been able to do it is because of my these acai bowls.


The acai berry is actually one of the healthiest berries you’ll ever find. Found in Brazil’s Amazon rain forest, the small, dark purple berries are packed with nutrients, antioxidants, amino acids and essential fatty acids ~ making them a super food. Being highly perishable we find them in the US as a frozen puree, making them perfect for smoothie bowls. An acai bowl is basically a really thick smoothie that’s been topped with granola.

Acai does your body good from the inside-out. From boosting energy to being a great anti-ager, they have so many benefits. The high amount of antioxidants helps balance your cholesterol, as well as boost your immune system. They have twice as many antioxidants as blueberries. The superfood also helps you maintain a healthy weight, by having the ability to reduce fat deposits. Umm… yes please!!! They help keep your digestive system clean by using the dietary fiber as detoxification. As if that wasn’t everything the nutrition in the berries gives your skin a healthy glow as well. So basically what I’m saying is you’d be CRAZY not to add them to your diet. Whether for breakfast, lunch or a snack… you’ll love them! They look delicious, are healthy, keep me full for so long and most importantly satisfy my craving for something sweet.


Be creative with your bowls and feel free to top with whatever fruit you have in the fridge. You can use almond milk or coconut milk instead of yogurt. Some people love to top with peanut butter, but here’s my favorite way to eat them:

Blend:
Acai Puree Pack (un-sweetened)
1 Frozen Banana
Scoop of Plain Greek Yogurt

Pour in a bowl and top with sliced strawberries and kiwi. I also add macadamia nuts, unsweetened coconut and granola. Then if I want to make it an extra-special treat, i’ll add a little of these chocolate chips. SO DELISH! Comment and let me know what ya’ll think.
